After receiving her degree in Nutrition and Dietetics in Venezuela and working as a Clinical Dietitian, Lucia moved to the U.S in 2009 seeking professional growth as her country was engaged in political conflicts that were closing doors for healthcare professionals. In 2012, she completed her MS in Nutritional Sciences from SJSU at San Jose, CA, and by 2013 she became an RDN. The process was not easy, during her journey Lucia experienced some of the challenges faced by minority students, and immigrants, to achieve credentialing and lead in the food and nutrition profession. Therefore, her goal is to make sure that every Latinx student feel supported and confident during their journey. She worked as a Clinical dietitian at Children’s Hospital Los Angeles as well as LAC-USC Hospital and taught graduate level classes at USC. Her experiences as a registered dietitian include Pediatrics neurology, burns, critical care, eating disorders, metabolic disorders and academics. Lucia’s advanced certification include Certified Nutrition Support Clinician.
After moving to Colorado, Lucia joined MSU Denver as full time faculty and the Undergraduate Program Director and also works as a PRN RDN in a local Hospital in Colorado. She is devoted to helping Latinx students succeed and diversify the workforce.
