Chelsea Capelo MBA, RDN, LD

Chelsea Capelo, MBA, RDN, LD, is the Director of Clinical and Patient Operations with Luby’s Culinary Services food service management. She is an experienced leader in project management, training & development, and healthcare strategy. She oversees all areas of patient services, menu software, retail wellness, and menus to meet the nutritional needs of patients, residents, and students of all levels. Chelsea specializes in food service systems, quality assurance, and menu management. Additionally, she has a wide range of experience working as a registered dietitian in all levels of healthcare, including community health and retail menu management. She is also active in business development and company growth initiatives with Luby’s Culinary Services. Chelsea obtained an MBA at Texas Woman’s University in 2021. She is the Business Development Director in the dietetic practice group, Dietitians in Business and Communications. Chelsea enjoys collaborating with dietitians in multiple dietetic practice groups, including the member interest group Latinos and Hispanics in Dietetics and Nutrition.
