Barbara Wakeen is presently the Principal – Food Service/ Nutrition Consultant for Correctional Nutrition Consultants, Ltd., North Canton, Ohio, specializing in correctional venues nationwide. In that capacity, for more than 28 years now, she develops and analyzes cost-effective menus for nutritional content based on clients’ and bid specifications in accordance with state and federal guidelines for adult and juvenile correctional facilities, Immigration and Customs Enforcement (ICE) family residential centers, Customs and Border Protection, community rehabilitation facilities, contract management companies, senior meals and child nutrition programs. She also works with food processors, manufacturers and food distributors, and provides expert witness services as a correctional nutrition consultant.
Professionally, she has served as the Chair of the National Commission on Correctional Health Care (NCCHC), Chair of Dietitians in Corrections of the Association of Correctional Food Service Affiliates (ACFSA)
Her volunteer work with the Academy spans decades and includes Consumer Protection and Licensure Sub-Committee and its Compact Sub-Group as well as the Evidence Analysis Library Expert Work Group,and Chair of Dietetics in Health Care Communities (DHCC) and the DHCC Corrections Sub-unit.
In addition to numerous awards, she is editor of internationally recognized correctional resource publications and the author of over 50 professional articles and is a much sought after national speaker.
Finally, her nationwide employment requires that she obtain and maintain licenses and certifications. She holds twelve separate state dietitian licenses so is extremely well versed on the burdens of interstate practice and the benefits a dietitian compact will provide.
