LeGreta Hudson, MS, RDN, LD, CDCES, FAND is a retired Professor at the University of Missouri, in the Coordinated Program in Dietetics. Currently, she is an adjunct faculty member. LeGreta has had a number of careers from Assistant Store manager for a discount retailer to a Human Resource Manager for a major insurance company. LeGreta received a Bachelor of Science degree in Retail Marketing from Ferris State University and a Masters of Science degree and Dietetic Internship from Illinois State University. She has worked in many areas of dietetics including WIC, Outpatient Cardiac rehab, Diabetes Educator, Adult Weight Management educator and a Community Educator for a medical technology company. She is a former Chair of the Missouri State Committee of Dietitians licensure board and held an appointment as a Program Reviewer for the Accreditation Council for Education in Nutrition and Dietetics. She has been involved in a number of work groups, task force and committees for the Commission on Dietetic Registration (CDR). Le Greta is a former CDR board member and past Vice Chair. She currently is the CDR representative to the Disaster Relief committee. She serves as an Advisory Board member for two Dietetic Internships Programs.
Le Greta is passionate for food and culture, hosting RD’s, Interns, Chefs and other interested parties each summer for international experiences abroad. She is the Chief Promotion Officer for Foodcultureology, co-leading immersive experiences in Ireland, Italy, and Portugal. She currently teaches a food and culture course through the University of Missouri.
