Lori Klein, MPH: Nutrition, NDTR, Ed.D. candidate, teaches as an adjunct professor of Nutrition and Kinesiology at West Chester University of PA. As the parent of two sons with autism, Lori also has decades of direct experience on the challenges related to nutrition and food prepara-tion for individuals with developmental disabilities. These personal experiences inspired her nutri-tion research in the MPH Capstone Project, Improving Nutrition Outcomes for Adults with Au-tism: Development of a Nutrition Education Protocol for Direct Care Staff. Lori is co-author of the Nutrition chapter in the 2018 Handbook of Intellectual Disabilities: Integrating Theory, Research and Practice.
