Lisa Carlson, MS, RDN, LDN is the campus registered dietitian nutritionist at Northwestern University Dining through Chartwells Higher Education. In her role, Lisa provides individual counseling for students, hosts wellness sessions and works with the campus chefs to promote healthy eating and accommodate food allergies. Lisa’s passion is working with vulnerable college students — those with eating disorders, food insecurity issues or food-health concerns such as food allergies. She has lead an extensive allergen education program at Northwestern University that involves many touch point from chefs and servers to friends and family to RAs and roommates. Lisa is also passionate about mindful and inclusive dining helping students make peace with food and enjoy eating without judgment. Prior to joining Northwestern, Lisa worked in food communications for brands such as Gatorade and Quaker Oats and in food journalism as articles editor for COOKS Magazine and associate food editor at Glamour. She has extensive experience in nutrition counseling, teaching and in culinary nutrition and has taught nutrition communications at several universities in the Chicagoland area. Lisa received her bachelors degree in nutritional sciences from Cornell University and her masters degree in nutrition communications from Boston University. She completed her dietetic internship at the Oregon Health Sciences University in Portland, Oregon.
