Melissa Pflugh Prescott is currently an Assistant Professor at the University of Illinois at Urbana-Champaign. Dr. Prescott investigates strategies to improve nutrition security while mitigating the negative impact of the food system on the environment, such as food waste. Dr. Prescott’s research is funded by the United States Department of Agriculture and the National Science Foundation. She completed her PhD in Public Health at New York University and her undergraduate degree in Food Science and Human Nutrition at the University of Florida.
