Ana Abad-Jorge, Ed.D., RDN is an Assistant Professor at James Madison University, teaching Clinical Nutrition I and II, Life Cycle Nutrition, Foundations of Nutrition Practice and Nutrition for Wellness. Before joining JMU, Dr. Abad-Jorge served as Program Director and Assistant Professor for the Bachelor’s in Health Sciences Management at the University of Virginia for 6 years. Before transitioning to academia in 2014, Dr. Abad-Jorge had a 27-year clinical nutrition career at UVA Health, serving as a pediatric and neonatal RDN in various clinical areas including acute pediatrics, pediatric clinics, and the Newborn and Pediatric Intensive Care Units. She also served as the program director for the UVA Health System Dietetic Internship Program for close to 20 years. Dr. Abad-Jorge earned her Master’s in Food Science & Human Nutrition from the University of Florida in 1986 and her Education Doctorate in Higher Education and Adult Learning in 2012. She has received numerous institutional and professional awards, including the ADA Foundation Doctoral Scholarship in 2010. Dr. Abad-Jorge has over 38 publications in the areas of pediatric and neonatal nutrition, nutrition higher education, and healthcare management education. Dr. Abad-Jorge currently serves as a program reviewer with the Accreditation Council for Education in Nutrition and Dietetics (ACEND) and is a Fellow of the Academy of Nutrition and Dietetics (FAND).

Learning Community and Student Engagement Through the Community of Inquiry Framework in a Dietetics Program

Dr. Marie Allsopp is a Clinical Assistant Professor at Purdue University in the Department of Nutrition Science, a position she has held since January of 2019. She is passionate about pursuing pedagogical practices to increase undergraduate student engagement and her line of scholarship of teaching and learning includes using multi-media to engage students, collaborative learning, service-learning, flipped classrooms, diversity, and inclusion. In fall of 2019, Marie was a fellow of Instruction Matters: Purdue Academic Course Transformation (IMPACT). Prior to full-time academia, Marie accrued over a decade of work experience as a registered dietitian in clinical, community, and customer service settings in North Georgia and South Florida. After completing her doctorate in 2015, Marie held full-time posts at Miami University (OH) and later at Mississippi State University. Marie has received recognition professionally as a practitioner, program director, and assistant professor for her dedication and service. In 2021, Marie began a two-year program of work to advance inclusion, diversity, equity, and access (IDEA) in nutrition and dietetics, after being selected as the Prioritizing Diversity and Inclusion in Nutrition and Dietetics: Overcoming Obstacles to RDN Recruitment, Education and Advancement Fellow with the Academy of Nutrition and Dietetics Foundation.

Breta Alstrom is an award-winning dietitian who specializes in pediatric integrative and functional medicine for neurodivergent children. Her career and education have been unique with a focus on pediatric nutrition from Day 1; she received a Master’s degree from the University of Kansas Medical Center focused on complex pediatric care and neurodevelopmental disabilities, leading her to become an advocate for a medical model that centers accommodations for disability and family needs. Breta operates a virtual private practice, NeuroNutrition KC, that prioritizes family health and wellness for children with complex health needs by carving out a space where families are heard, acknowledged, and play an active role in their child’s care.

Nurturing Neurodivergence: Nutrition and Care Considerations for Children with Autism and ADHD

Hannah completed her bachelor's degree in nutrition at Case Western Reserve University in Cleveland, OH. She then moved back to her hometown of New York City, where she completed her masters and dietetic internship at the CUNY Graduate School of Public Health and Health Policy. During this time, she worked with organizations such as the American Heart Association and the CUNY Urban Food Policy Institute, and became involved in research, health informatics, and health advocacy. Hannah completed her dietetic clinical rotation at the New York State Psychiatric Institute, working in all units, including eating disorders; substance abuse, psychotic disorders and affective disorders; and severe mental illness. This rotation influenced her decision to continue working in this area for her career. At Children’s Hospital Colorado, Hannah covers all inpatient and partial hospitalization psychiatry services, as well as the Eating Disorder Day Treatment Program and medical admissions; she also supports the outpatient adolescent medicine clinic. A competitive swimmer for 16 years, Hannah still finds enjoyment in being active. Outside of work, you can likely find her at the pool, hiking and walking with her dog Azula, dancing to her favorite music, or cooking.

Monica Amburn, MS, RDN, has a 20-year career spanning multiple settings, with a focus on business development and strategic food and nutrition communications in retail and corporate settings. Currently, Monica serves as Vice President at Eat Well Global, a highly specialized strategic consultancy with a mission to empower global change agents in food and nutrition through insights, strategic planning, and stakeholder engagement. Prior to this position, Monica spent over ten years working in the food retail industry, first as a corporate dietitian and communications manager with Southeastern Grocers, representing the BI-LO and Winn-Dixie brands. Following this position, Monica served as Senior Director of Health and Wellness at Vestcom, where she supported the healthyAisles® health and wellness attribute database and developed bespoke retailer communications aligned to regulatory guidelines for display at the point-of-sale. Monica completed her Bachelor’s degree and dietetic internship at Radford University, and her Master’s degree in Nutrition and Dietetics from the University of North Florida. Betsy Anderson Steeves is a Senior Research Scientist at the Gretchen Swanson Center for Nutrition and a 20+ year member of the Academy of Nutrition and Dietetics (AND). She holds a master’s degree from the University of Tennessee in community nutrition and a doctoral degree from Johns Hopkins University in public health. Betsy has spent over 10 years conducting research in the areas of food and nutrition security, food access, and chronic disease prevention, with the goal of increasing equitable access to food particularly among maternal and child populations. Jeanette M. Andrade is an assistant professor of nutritional sciences and master’s in dietetic internship director at the University of Florida (UF) in Gainesville. She holds a B.Sc. in Nutritional Sciences at the University of Illinois, Champaign-Urbana, a M.S. in Dietetics from Eastern Illinois University, and a Ph.D. in Human Resource Education at the University of Florida. Dr. Andrade's long-term goal is to minimize the rapid progression of chronic kidney disease in patients through dietary modifications. Her research interests are focused on reducing inflammation and improving nutritional status of those with kidney disease through modifications of foods and nutrients and nutrition education among both health professionals and patients. Dr. Andrade is an affiliated faculty in the Center for Latin American Studies at UF. She is a member of Nutrition and Dietetic Educators and Preceptors (NDEP), an organizational unit within the Academy of Nutrition and Dietetics, the American Society for Nutrition, the North American Colleges and Teachers of Agriculture, and the Society for Nutrition Education and Behavior.

She is a National Health Service Corp Scholar who worked with the underserved population in inner city Baltimore. Prior to her current role at the JHU Center for ALS Specialty Care, JinAe worked with the HANDLS study (Healthy Aging Across the Lifespan in Neighborhood of Diversity) with the National Institute of Aging at NIH. Her current role includes teaching nutrition to the ALS patients.

Diversity at End of Life: How Different Beliefs and Values Impact the Nutrition Plan

Megan started her career in Chicago after completing University of Illinois Chicago’s coordinated nutrition program in 2002. She worked at several hospitals all over the city, gaining a mass of experience in several clinical areas, including pediatrics and intensive care. Gaining an interest in illness prevention and policy, she earned her MPH in Health Policy and Law from Loyola, and then moved to Denver where she began working for the VA Eastern Colorado Healthcare System as an outpatient primary care dietitian. After several years, she transitioned into food operations management and is now Acting Chief of Nutrition and Food Service.

Christina Badaracco is a healthcare consultant at Avalere Health, where her focus is on evidence generation, quality measurement, and elevating the role of nutrition in healthcare. She also regularly writes, teaches, and presents about nutrition, cooking, and sustainable agriculture—including co-writing The Farm Bill: A Citizen’s Guide in 2019, publishing five cookbooks with the Transamerica Institute, and co-developing a culinary medicine elective at the Georgetown University School of Medicine. Christina previously worked for the EPA, Teaching Kitchen Collaborative, Oakland Unified School District, NIH Clinical Center, and more. She currently serves on the board for Slow Food DC, the Academy of Nutrition and Dietetics’ Farm Bill Task Force, the Teaching Kitchen Collaborative’s nutrition working group, and other organizations. Jennifer Barnoud is a Registered Dietitian Nutritionist and Certified Eating Disorder Specialist working as a college health nutrition counselor at the University of Texas at Austin. She completed her undergraduate degree with a double major in psychology and nutrition at Middle Tennessee State University and completed her Master of Science in Clinical Nutrition and Dietetic Internship at the University of Memphis. She began her career treating eating disorders at IOP and PHP levels of care before moving into providing nutrition counseling in a college health setting for the past 8 years. The convergence of medical nutrition therapy and eating disorder treatment has provided an ideal landscape to bridge the gap between these two areas. Michelle Barrack, PhD, RD, CSSD, FACSM is an Associate Professor of Nutrition and Dietetics at California State University, Long Beach and a Board-Certified Specialist in Sports Dietetics. Dr. Barrack has a Masters of Science in Exercise Physiology from San Diego State University and a PhD in Nutritional Biology from the University of California, Davis. She has published research on topics addressing adolescent athlete bone health, bone stress injury, the Female and Male Athlete Triad, dietary supplements, and nutrition for endurance runners. She previously worked as a Team Dietitian for the University of California, Los Angeles (UCLA) Department of Athletics. In 2023, Dr. Barrack was awarded the California Academy of Nutrition and Dietetics Excellence in Research Award. Dr. Barrack currently serves as President of the Female and Male Athlete Triad Coalition. Perspectives on the Science and Application of the Female and Male Athlete Triad

At 17 years old, Justin Batchelder incurred a cervical spinal cord injury (SCI). While adjusting to life with a disability, he earned a bachelor’s degree in Nutrition and became a Dietetic Technician Registered (DTR). After volunteering with Metro Caring, an anti-hunger organization, Justin worked as their Nutrition Ed Coordinator in a community-oriented role. After several years he adjusted his hours to pursue a master’s in nutrition, which he completed in 2021. He dreamt about greater health for everyone in the SCI community; their proclivity for chronic disease is inextricably linked to nutrition. He focused his school projects on SCI and started noticing a paucity of nutrition-related support for the SCI community. His goal is to bolster these services through evidence-based practice. Justin enjoys a good cup of coffee, museum wandering, reading, adaptive exercise, bowling, trivia, and scuba diving. Justin completed his dietetic internship in May 2023 at Metropolitan State University and is a registered dietitian nutritionist.

Dr. Sapna Batheja is an Assistant Professor and Program Director of the MS/RD program in the Department of Food and Nutrition Studies at George Mason University. Batheja’s research interests are how to leverage technology to create dietary behavior changes and impact overweight and obesity. Additional research interests include evaluating the level of acculturation and intergenerational differences in dietary habits among Black Americans and Latino Americans. As a Registered Dietitian, Batheja has had extensive experience in a variety of DC-based community settings, including schools, policy, and grant management. As a nationally recognized nutrition consultant, entrepreneur, and speaker, Tammy Beasley continues to devote her experience and passion to the field of behavioral health. Over her 30+ year career, Tammy has collaborated with multi-disciplinary clinical and executive leadership teams to develop innovate nutrition programs to bring sustainable hope and healing to clients. She is the first RDN certified as an eating disorder specialist (CEDS) with iaedp in 1993 and continued her advocacy for RDNs’ role on the eating disorder treatment team as the first RDN to join the Certification Committee in 2008 and first RDN to serve as Certification Director from 2013-2017. During her service, CDR approved the CEDS certification for RDNs in June 2015, a landmark decision that validated the role of nutrition in eating disorder treatment and set the stage for Tammy to participate as one of the co-authors of the Academy of Nutrition and Dietetics Standards of Practice/Standards of Professional Performance (SOP/SOPP) for dietitians in eating disorders published in November 2020. Most recently, Tammy completed her M.S. in Organizational Leadership in 2021, integrating her commitment to servant leadership with her passion for mentoring and training. She is a trustworthy resource for national media, has extensive experience on live TV, is a frequent guest on nutrition podcasts and has been interviewed for USA Today, the NY Post, Parade and Today’s Dietitian. Her commitment to nutrition healing through the mantra of “do no shame” supports both the multi-disciplinary treatment team and individual clients in their partnership towards recovery.

A Neurosequential Bottom-Up Approach to Healing of Trauma-Based Eating Disorders: The RDN and Therapist Collaboration

Evelyn received her Master of Science degree in Nutrition while completing her Dietetic Internship at The Ohio State University. While there, she also minored in Human Development and Family Science and was a graduate trainee for the Leadership Education in Neurodevelopmental Disabilities (LEND) program. After becoming a Registered Dietitian in 2014, Evelyn worked at Nationwide Children’s Hospital, then moved to Cleveland Clinic Children’s Hospital. She has worked in both inpatient and outpatient settings treating children with a variety of complex medical and developmental diagnoses (ex. Pediatric Feeding Disorders, Autism, ADHD, Cerebral Palsy, Down Syndrome, Prematurity, Epilepsy, TBI, Transplant). Over the past few months, she has transitioned to a fully outpatient role where she will continue to work in the transdisciplinary Pediatric Feeding Disorders Program, but also provide care to many other complex pediatric patients. Evelyn plans to continue to use her knowledge from the inpatient setting to support children and their families and ensure they meet their nutritional needs in the context of their home.

Dr. Berger is a PhD-investigator and registered dietitian who has devoted her career to studying the nutritional determinants of early growth and brain development. Dr. Berger received her doctorate in Nutritional Sciences at The University of Georgia (UGA). She completed fellowships with Dr. Leann Birth at UGA and Dr. Michael Goran at Children’s Hospital Los Angeles. Dr. Berger currently holds a faculty appointment at Brigham and Women’s Hospital. The goal of Dr. Berger’s research is to understand human milk biology and determine its influences on infant growth, brain development, and cognitive functioning. She aims to explicate the factors in human milk, including those derived from maternal diet, that shape the structure of the infant brain, the framework for future neurodevelopment. Dr. Berger’s work has shown that exposure to simple and complex carbohydrates in utero and through breastfeeding associates with brain development using MRI at 1 month and cognitive capacities at 24 months of age in full-term infants. Her current NIH-funded research builds on her previous findings and examines the role of human milk oligosaccharides on brain development in preterm infants. Ultimately, this work will enhance our understanding of human milk biology, with implications for the nutritional care of preterm infants.

Unraveling the Mysteries of Human Milk: Present and Future

Rachel Berton, RDN, LD is a Community Dietitian Nutritionist with Open Hand Atlanta. She obtained her Bachelor of Science in Human Nutrition and Dietetics from The Ohio State University and completed her dietetic internship through Oregon State University. Prior to working with Open Hand, she worked in a variety of settings ranging from clinical dietetics to agriculture. In her current role, she provides day-to-day management for the Innovations in Nutrition grant from the Association for Community Living awarded to Open Hand. All via telehealth programming, her tasks include providing group nutrition education and Medical Nutrition Therapy to the older adult population. Additionally, she oversees survey and data entry in conjunction with the Nutrition Services Liaison and creates culturally sensitive content for presentations and handouts. She is currently working toward Board Certification as a Specialist in Gerontological Nutrition.

Allison B. Blackmer, PharmD, BCPS, BCPPS, FCCP, FASPEN Allison is the Director of Clinical Practice, Quality and Advocacy at the American Society for Parenteral and Enteral Nutrition (ASPEN). Allison joined the ASPEN team in this role in the spring of 2021 after more than a decade of clinical experience. Allison completed her PharmD degree at the University of Illinois at Chicago in 2008 and then completed two years of post-graduate residency training at the University of North Carolina, specializing in pediatric pharmacotherapy. Upon completion of training, Allison served as a faculty member at the University of Michigan and the clinical pharmacist on the pediatric surgery service at C.S. Mott Children's Hospital (2010-2014) and then as a faculty member at the University of Colorado School of Pharmacy and as the clinical pharmacist in the Special Care Clinic at Children's Hospital Colorado (2014-2021). She remains adjunct faculty at the University of Colorado School of Pharmacy. In her role at ASPEN, Allison serves many roles directing the clinical practice, safety/quality, and advocacy efforts in order to improve the efficacy and safety of nutrition support for all patients.

The Bigger Picture of Shortages in Nutrition Support: Implications for Clinical Practice

Lynn Blanchard is the Director of the Dotdash Meredith Test Kitchen, located in Des Moines, Iowa. Lynn ensures that all recipes that appear in DDM publications are thoroughly tested by staff culinary specialists in conditions that replicate home kitchens. Brands tested in the Des Moines location include Allrecipes, Better Homes & Gardens, Country Home, Forks Over Knives, Magnolia Journal, Midwest Living, and Traditional Home. It’s been a delicious journey for Blanchard. After graduating from the Iowa State University with Bachelor of Science degrees in Consumer Food Science and Community Nutrition, Lynn joined the Meredith Corporation staff in 1985 as a home economist, testing recipes and assisting with food photography. In 1996, she began managing the Test Kitchen photo studio as the Senior Food Stylist. During this time, she styled food for many of the Meredith food publications. She assumed the responsibilities of her present position in 1999. In her free time, she enjoys gardening and cooking for family and friends.

Dr. Andrew (Drew) A. Bremer is a board-certified internist, pediatrician, and pediatric endocrinologist, and has a Ph.D. in pharmacology. Prior to joining the NIH, Drew was an Associate Professor of Medicine and Pediatrics at the Vanderbilt University School of Medicine. His areas of interest and expertise include pediatric and adult endocrine disorders, the impact of maternal diet and gestational obesity/diabetes on fetal programming, the developmental origins of health and disease, the impact of the intrauterine environment on long-term maternal and child health outcomes, childhood obesity, and the role of nutrition in development and health throughout the life cycle. In addition to being the Chief of the Pediatric Growth and Nutrition Branch (PGNB) at NICHD, Drew also served as the Acting Chief of the Pregnancy and Perinatology Branch (PPB) and the Program Official for NICHD’s Neonatal Research Network, Maternal-Fetal Medicine Units Network, and Global Network for Women’s and Children’s Health Research from 2019 - 2022. Serving the Future: A Vision for Nutrition Research

After receiving her degree in Nutrition and Dietetics in Venezuela and working as a Clinical Dietitian, Lucia moved to the U.S in 2009 seeking professional growth as her country was engaged in political conflicts that were closing doors for healthcare professionals. In 2012, she completed her MS in Nutritional Sciences from SJSU at San Jose, CA, and by 2013 she became an RDN. The process was not easy, during her journey Lucia experienced some of the challenges faced by minority students, and immigrants, to achieve credentialing and lead in the food and nutrition profession. Therefore, her goal is to make sure that every Latinx student feel supported and confident during their journey. She worked as a Clinical dietitian at Children’s Hospital Los Angeles as well as LAC-USC Hospital and taught graduate level classes at USC. Her experiences as a registered dietitian include Pediatrics neurology, burns, critical care, eating disorders, metabolic disorders and academics. Lucia’s advanced certification include Certified Nutrition Support Clinician. After moving to Colorado, Lucia joined MSU Denver as full time faculty and the Undergraduate Program Director and also works as a PRN RDN in a local Hospital in Colorado. Jennifer’s leadership experience in nutrition support includes being the past president of the NJ Chapter of the American Society for Parenteral and Enteral Nutrition (ASPEN) and past chair of the Nomination Committee for Dietitians in Nutrition Support (DNS). Currently, Jennifer is an Assistant Professor in the Department of Clinical and Preventive Nutrition Sciences at Rutgers, SHP in the Masters of Science in Clinical Nutrition GP in Newark, NJ. In 2022, Lyndi Buckingham-Schutt joined Iowa State University as an Assistant Professor of Community Nutrition and Health and a Human Science Extension and Outreach State Specialist in Nutrition and Wellness. Prior to her role at Iowa State University, Lyndi was the Director of Wellness and Nutrition Policy, where she was responsible for developing and implementing The Harkin Institute’s wellness and nutrition policy agenda, research projects, and educational outreach. From 2013-2017 Lyndi was an USDA Fellow for Childhood Obesity Prevention at Iowa State University and studied the effect of a physical activity, nutrition, and behavioral intervention during pregnancy to improve maternal and fetal outcomes. Lyndi’s research focuses on evidence-based policy approaches to improve food and nutrition systems that support access to healthy food, sustainable development, and food equity. Lyndi received a BA in Exercise Science from St. Olaf College, a BS in Dietetics from Iowa State University, and a PhD in Interdisciplinary Nutritional Science from Iowa State University. Outside of Iowa State, Lyndi is the past-chair of the Academy of Nutrition and Dietetics Legislative and Public Policy Committee, and a member of Above and Beyond Cancer board and Iowa ACE’s 360 board.

Dr. Lauren Butler is a Registered Dietitian Nutritionist and serves as an Assistant Professor in the Nutrition and Foods Program at Texas State University. Dr. Butler holds a doctoral degree in Nutrition from the University of North Carolina at Chapel Hill Gillings School of Global Public Health, where she was trained as a nutrition epidemiologist. She completed postdoctoral work with the University of Florida’s Health Disparities Research and Intervention Program, where she conducted community-engaged research and interventions. Dr. Butler’s research aims to advance social justice and health equity through weight-inclusive and non-diet behavioral health interventions. She utilizes a mixed methods systems-approach to develop population-specific strategies to address weight stigma, body image concerns and disordered eating behaviors, and improve cardiometabolic health among marginalized communities. Dr. Butler leads the Food Freedom Research Team through which she mentors graduate and undergraduate students to address internal and external fatphobia, healthism, ableism, racism, weight bias and mental health stigma. She also serves as one of two Departmental representatives on accelerating action on the White House Conference on Hunger, Nutrition, and Health goals to end hunger, improve nutrition and physical activity, and reduce diet-related diseases and disparities and implementing the corresponding National Strategy. Her work includes building public awareness of USDA’s actions to advance food and nutrition security, as well as collaborating and building partnerships with key stakeholders to maximize our reach and impact. Her research centers on promoting healthy eating among infants through age five-years-old with a particular focus on accelerating health equity among historically underserved populations via community-based participatory research and focusing on developing, implementing, evaluating, and sustaining best practices and policies in the early child education setting. She has developed a variety of innovative interventions, which use theater, media, and other arts-based approaches. She is the author of numerous peer-reviewed publications and secured over $1M in grants focused on obesity prevention and health equity from Healthy Eating Research, a national program of the Robert Wood Johnson Foundation, and the USDA. From 2010-2013, she worked as an ORISE Research Fellow at the Centers for Disease Control and Prevention Division of Nutrition, Physical Activity, and Obesity, where she was highly engaged in the early care education elements of the First Lady Michelle Obama’s Let’s Move! initiative dedicated to helping kids and families lead healthier lives. Dr. Cotwright holds a PhD in Foods and Nutrition and Community Nutrition and MS in Foods and Nutrition both from the University of Georgia and a bachelor’s degree in Biology from Howard University and is a Registered Dietitian Nutritionist. Serving the Future: A Vision for Nutrition Research

Heather has served as the Didactic Program in Dietetics director at Virginia Tech for the past 13 years where she teaches courses in the profession of dietetics, food communications, and management in nutrition and dietetics. Prior to her academic position, she worked as the Kroger Mid-Atlantic Corporate Dietitian for six years where she provided nutrition education to customers, pharmacists, store management, community stakeholders and on multiple media channels. Prior to that, Heather was the Director of Nutritional Services in an 800-member continuum of care retirement community and served as a consultant for multiple long-term care communities and two hospice organizations. She received both her B.S. and M.S. degrees in Human Nutrition, Foods, and Exercise from Virginia Tech and completed a supervised practice program with Aramark in Philadelphia. Heather is a recipient of the 2017 NDEP Outstanding Dietetics Educator Award for Area Six, the Virginia Distinguished Dietitian of the Year award in 2012, the Outstanding Alumni Leadership Award from her home college in 2012, and the Young Dietitian of the Year Award for Virginia in 2002. UH Food for Life Markets: Addressing Food Insecurity and Related Chronic Illnesses Through Nutrition Programming

Sue joined MANNA in 1999 as a Registered Dietitian Nutritionist (RDN). At MANNA, Sue has held several positions prior to being appointed Chief Executive Officer in 2012. Sue garnered national recognition in June 2013 when she co-authored a key study, “Examining Health Care Costs Among MANNA Clients and a Comparison Group” published in the peer-reviewed Journal of Primary Care & Community Health. This research study examined the health care cost savings associated with MANNA’s model and has ongoing impact on nutrition policy nationwide. Sue has presented MANNA’s work at conferences and meetings across the country. She has also testified in front of the United States Congress. Sue is an Advisory Board member of the national Food Is Medicine Coalition and served as co-vice-chair from 2019-2022. In 2019 Sue was invited to join the Food Lab Accelerator at Google as a product owner for Food Is Medicine. Other accolades include, the 2015 Jefferson College of Population Health Education Hero Award, Comcast’s Newsmakers selection, the Cancer Treatment Center’s America Caregiver Women of the Week Award, and Bank of America’s Neighborhood Builders Award. Going Beyond Glycosylated Hemoglobin: How Dietitians Impact Outpatient Diabetes Care and Outcomes

Steve Davis has been practicing medical malpractice law for the past 29 years. He has a well-established trial law firm which provides legal representation and counsel to individuals across the country who have been injured due to medical malpractice. Steve’s legal skills and success have been well-recognized in Texas and nationally. As a seasoned medical malpractice lawyer, Steve takes on complex litigation, taking the time to learn the medicine involved in his clients’ cases. Since 2012, Steve has devoted a significant portion of his practice to the prosecution of Wernicke’s encephalopathy cases and has successfully handled these cases in Texas and nationally. Steve is here to share his expertise on the topic of Wernicke’s encephalopathy, since all too often, successful litigation has proven that healthcare providers have failed to timely initiate empiric thiamine repletion, particularly for patients at risk of malnutrition, including bariatric surgery patients, patients with chronic alcoholism, and prolonged hospitalizations related to chronic illnesses. It is these clients who have ended up with permanent neurological injuries that end up requiring life-long care which imposes multi-million dollar damage claims. Steve is planning to share with you some medicolegal case scenarios which have been successfully tried or settled in a court of law. Each of these cases involve breaches in the standard of care by registered licensed dieticians who, because these clinicians failed to utilize requisite resources including their clinical experience, knowledge, skills and training, caused or contributed to permanent and profound neurological injuries of his clients.

Suzanne de la Monte, MD MPH is a Professor of Pathology, Neurology, and Neurosurgery at the Alpert Medical School of Brown University with appointments at the Rhode Island Hospital and Women & Infants Hospital. Her residency training in Anatomical and Pediatric Pathology was from Hopkins and Neuropathology fellowship was from Massachusetts General Hospital. Dr. de la Monte launched her career as a physician-scientist while on the faculty at MGH and Harvard Medical School. In 2000, she joined the faculty at Brown, where she conducts basic, translational, and clinical research on mechanisms and consequences of brain insulin resistance and metabolic dysfunction, leading her to coin the term ‘Type 3 Diabetes’ to reflect the main underlying problems in Alzheimer’s and other dementing neurodegenerative diseases. Her lab actively investigates how lifestyles and unintended exposures cause neurodegeneration due to brain insulin resistance, oxidative stress, and metabolic dysfunction. These efforts dovetail with assessments of novel approaches for therapeutic intervention. Beyond her academic research activities, Dr. de la Monte is an educator and mentor to junior faculty, postdoctoral fellows, graduate, medical, college, and high school students, a practicing pathologist and neuropathologist, medical-legal consultant, medical scientific writer and editor, and reviewer of scientific research proposals. Practical Application of the IDDSI Framework: A Spotlight on Indian Cuisine

Steven Dehmer, PhD is a senior research investigator and health economist at the HealthPartners Institute in the United States. His research is focused on the economics of disease prevention, with an emphasis on cardiovascular disease, diabetes, obesity, and cancer. His areas of methodological expertise include microsimulation modeling, disease risk estimation, cost-effectiveness analysis, economic policy analysis, and causal inference from observational data. Dr. Dehmer led the development of the HealthPartners Institute ModelHealth: Cardiovascular microsimulation model for assessing cardiovascular disease prevention policies and interventions. Using this model, Dr. Dehmer led the decision analysis conducted to support the U.S. Preventive Services Taskforce recommendations for aspirin published in 2016 and 2022. Dr. Dehmer’s current and past research has been funded by the National Institutes of Health, Centers for Disease Control and Prevention, Patient-Centered Outcomes Research Institute, and the Agency for Healthcare Research and Quality. His research has been published in leading journals such as JAMA, Nature, Annals of Internal Medicine, and the American Journal of Preventive Medicine. In 2018, Dr. Dehmer received the Emerging Aspirin Investigator Award from the International Aspirin Foundation. His professional expertise has also been recognized by his service on the Complex Systems Science and Modeling Issue Brief Subcommittee of the Healthy People 2030 initiative and as an expert panelist for the National Academy of Medicine. Dr. Dehmer received his Ph.D. in applied economics from the University of Minnesota in 2012 and also holds a B.A. in economics and computer science from Saint John’s University in Minnesota.

Patrick Devenny is a former Colorado University football player who graduated with a degree in business. Patrick has struggled his entire life with disordered eating and restrictive eating. Looking back, it is hard for him to pinpoint the exact moment that his eating disorder started to consume his life, but he believes that given the pressures of trying to do whatever was necessary to achieve his dream of playing in the NFL, food became an issue. His eating disorder really became evident once his career was over and in 2015, he realized just how overwhelmed his life was with food and body image issues. Christina Economos, PhD is the Dean ad interim at the Friedman School, New Balance Chair in Childhood Nutrition, and a Professor of Public Health and Community Medicine at Tufts University School of Medicine. At the Friedman School, she co-founded and served as Director of ChildObesity180, a nationally renowned research initiative focused on addressing the complex drivers of child health and promote equity. Dr. Economos currently serves as the principal investigator on multiple large-scale, community-based interventions that examine childhood nutrition and physical activity with the goal of improving the health of all of America's children. Her bio-behavioral research studies are interdisciplinary and include theory-based obesity prevention interventions, cutting edge systems science, and partnerships with diverse populations in urban and rural communities in schools, out-of-school environments, childcare centers, and restaurants. She has authored more than 200 scientific publications. She has co-created and co-directed The Tufts Institute for Global Obesity Research (TIGOR) a university-wide institute to address global obesity. She also serves as Vice Chair of the Roundtable on Obesity Solutions (ROOS) at the National Academies of Science, Engineering, and Medicine in Washington DC. A dedicated scientist, she is equally committed to teaching and mentoring. At Friedman, she has advised over 100 master’s students by supervising internships and serving on multiple thesis committees. Dr. Economos received a Bachelor of Science from Boston University, a Master of Science in Applied Physiology and Nutrition from Columbia University and a Doctorate in Nutritional Biochemistry from Tufts University.

Lauren "Casey" Flowers obtained her MS in Clinical Nutrition at the University of Memphis in Tennessee. Her thesis was completed at St. Jude Children’s Research Hospital and was published in the Journal of Nutrition in Clinical Practice. Initially, Casey utilized her clinical nutrition skills in the hospital in-patient ICU setting before shifting her focus to out-patient weight management in bariatrics. In Nashville, she worked as the Program Dietitian where she assisted in the improvement of patient outcomes by developing and re-vamping support group programs and the center’s social media presence. Casey has focused her career on improving health equity in weight management and bariatrics, and accepted a position at Morehouse Healthcare in Atlanta, Georgia. She also enjoys teaching plant-based nutrition in a community cooking class and weight management curriculum to dietetic, pharmacy, and medical students. As an active member of the Academy of Nutrition and Dietetics, she has assisted in the development of the Weight Management Practice Group’s resource page, written for Weight Matters Magazine, and appeared on the local Memphis and Atlanta news. Casey currently sits on the Education Committee for the Georgia ASMBS Chapter, and she has served as co-director for the ASMBS 2022 and 2023 Nutrition Course. Front-of-Pack Nutrition Labeling: Exploring Systems to Inform and Empower Consumer Choice

Gretchen Groves is a Project Manager for the Gretchen Swanson Center for Nutrition (GSCN). Her work in food access began as a farmers market outreach intern working to increase Supplemental Nutrition Assistance Program (SNAP) participant utilization of farmers markets in Montana. After earning her Registered Dietitian Nutritionist credentials, Groves worked as a clinical dietitian in a rural acute care hospital and in school nutrition as a research coordinator for a USDA Team Nutrition Training Grant focused on improving school meal quality in Montana. In her current role at GSCN, Groves provides project management support for the reporting and evaluation team of the Nutrition Incentive Program Training, Technical Assistance, Evaluation, and Information (NTAE) Center. The NTAE and Nutrition Incentive Hub connects Gus Schumacher Nutrition Incentive Program (GusNIP) grantees and applicants with a community of practitioners and collaborators to help provide guidance and enhance nutrition incentive and produce prescription projects.

She completed her dietetic internship at Michael E. DeBakey VA Medical Center in Houston. Currently she works as a renal dietitian for Davita Kidney Care. Areli has served in several roles for the academy such as Director of the TAND Southeast Region and Membership Co-Chair for LAHIDAN. In her free time Areli enjoys teaching Zumba, reading cozy mysteries and spending time with her family, friends and two Labradors.

Beans on the Scene: Adding Latino Foods to the Renal Patient’s Diet

Haley Billings Hall is a registered dietitian in Tulsa, Oklahoma. She works in an outpatient pediatric clinic alongside a multidisciplinary team. Throughout her practice she saw a connection between early life adversity and feeding difficulties, growth changes, and overall nutrition related habits. Although she was able to support these families with medical nutrition therapy, she felt unequipped to fully address their needs and concerns. This prompted her to go back to school to pursue a PhD in Human Development and Family Science. She is currently working to incorporate research on the effects of early life adversity on brain development, physiology, and health related behaviors into the field of nutrition.

Rosa K Hand, PhD, RDN, LD, FAND is an associate professor in the Department of Nutrition at Case Western Reserve University in Cleveland Ohio. Her research in dietetics staffing has led to an extensive publication/presentation list and recognition as the Ohio Research Dietitian of the Year for 2020. Dr. Hand is passionate about teaching research skills and evidence-based practice to aspiring and practicing RDNs. She serves in leadership roles at the local, state, and national level, including as chair of the Commission on Dietetic Registration and on the Editorial Board of the Journal of Renal Nutrition.

Angie Hasemann Bayliss is proud to support a team of over 70 talented RDNs at the University of Virginia Health as the Clinical Nutrition Manager. She has called UVA home for 15 years, first serving as an outpatient pediatric dietitian and later as the Dietetic Internship Director. Her work in the community and in leadership organizations led her to being named the Recognized Young Dietitian of the Year in Virginia, and she has served the state as affiliate President. Angie has been honored as Clinician of the Year for Morrison Healthcare and with the Kansas State University College of Human Ecology Young Professional Award. With experience teaching undergrad and graduate students at UVA and physicians across the state of Virginia, as well as the public through over 20 TV appearances, countless interviews for articles on nutrition, and over 150 presentations, she’s no stranger to nutrition education. Angie is an Instructor in the UVA School of Nursing and the Nutrition Thread Leader in the UVA School of Medicine. Angie holds three Bachelors’ Degrees, in Nutrition, Exercise Science, and Dietetics, from Kansas State University, and she earned her Masters of Science Degree in Health Communication from Boston University.

Cherine Hatem is a PhD candidate in the Community Health and Nutrition Promotion lab in the Department of Health and Human Performance at the University of Houston. Cherine is also a registered dietitian. Cherine had the unique opportunity to be exposed to a wide range of inspiring academic environments that encompass both the clinical field of nutrition as well as the research field. As a member of a multidisciplinary team of researchers at the University of Houston, Cherine was able to lead and participate in several research studies that contribute to the field of health and nutrition. Cherine’s research career has been focused on the health of minority groups and people who are medically underserved. Cherine has been involved in studies on food insecurity, health disparities, childhood obesity, dietary contributors to obesity, dietetic competencies, and dyslipidemia. Cherine is currently working on the Diversity and Inclusion Fellowship with Dr. Marie Allsopp and the RISA team of the Academy of Nutrition and Dietetics. This is Cherine’s second project with the Academy’s RISA team. Cherine had previously received the $10,000 EAL Fellowship Funding Award from the Academy for which she was granted the opportunity to lead a systematic review on the topic of dyslipidemia in adults.

Leading Change in Malnutrition: Improving RDN Value by Leveraging Data Analytics in Long Term Care

Dr. Hess is a Research Nutritionist in the Healthy Body Weight Research group at the Grand Forks Human Nutrition Research Center (GFHNRC) in Grand Forks, ND. Dr. Hess’s research is centered on identifying and evaluating strategies to help Americans meet recommendations from the Dietary Guidelines for Americans. Her work involves investigating how American diets currently align with dietary guidance and recognizing and addressing barriers to following recommendations, including dietary restrictions and dietary preferences. Before joining the GFHNRC, Dr. Hess served as Vice President of Scientific Affairs for the National Dairy Council in Chicago, IL. She is an active member and volunteer with several nutrition and scientific organizations, including the Institute of Food Technologists (IFT), the National Nutrient Databank Conference, and the American Society for Nutrition (ASN), and currently serves as Chair-Elect of the Nutrition Translation Research Interest Section with ASN and a member of the Annual Meeting Scientific Program Advisory Panel for IFT. She is also an adjunct assistant professor at the University of North Dakota. Dr. Hess received Bachelor of Arts degrees in French and English from the University of Texas at Austin and earned a doctoral degree in Human Nutrition from the University of Minnesota, where she studied the health impacts, consumption patterns, and dietary guidance around snacking, mushroom intake, and dairy intake.

Betsy earned her certification as a board-certified specialist in pediatric nutrition before opening Feed to Succeed in 2008. Their team of passionate providers serves both medically complex and healthy patients to promote optimal growth and development through the early stages of life. Betsy is a mother of two teens, an avid runner, a lover of dogs, her family and the outdoors. Using Data-Driven Strategies to Develop Nutrition Education Tools

Maggie is a Registered Dietitian currently working clinically at Cincinnati Children’s Hospital Medical Center within the pulmonary and sleep medicine department. After completion of her undergraduate degree in Nutrition and Dietetics and Didactic Internship, she found a special interest in pediatric obesity; her current position has allowed her to pursue this interest by offering an opportunity to create a role that provides Medical Nutrition Therapy to patients diagnosed with obesity, obstructive sleep apnea, and asthma. She continued to advance her education through pursing a Master of Science in Nutrition from the University of Cincinnati which she will complete in August of 2023. Maggie also competed the Certificate of Training in Obesity for Adults and Pediatrics in 2021. She has utilized this education to revise hospital wide education material as the chair of the Nutrition Education Council and co-chair of the Weight Management Education Council. Aside from work and school, Maggie is also involved in the field of dietetics on a national and regional level. Providing Non-biased Treatment and Optimal Patient-Centered Care for Children and Adolescents Living with Obesity

Dr. Carol Ireton-Jones received her PhD and Master’s degree in Nutrition from Texas Woman’s University. Her undergraduate degree in Nutrition and Dietetics came from Texas Tech University where she also received her clinical training. She developed The Ireton-Jones equations for estimating energy requirements in hospitalized patients and these are widely used nationally and internationally. Dr. Ireton-Jones provides out-patient nutrition care for people with GI disorders including IBS, gastroparesis and IBD, as well as those who require home parenteral and enteral nutrition. She continues to measure metabolic rate as an important part of determining individual energy expenditure in many diverse types of people. She has lectured extensively nationally and internationally on a variety of nutrition topics. She has received many honors and awards including the 2022 Award for Excellence in Entrepreneurial Practice from the Academy of Nutrition and Dietetics. In April, she received the 2023 Chancellor’s Alumni Excellence Award from Texas Woman’s University. Balancing both evidence-based nutrition with sensible and practical applications is her strong point!

Dr. Elizabeth Yakes Jimenez is a Professor and the Assistant Dean for Research for the College of Population Health at the University of New Mexico Health Sciences Center, with secondary appointments in the Departments of Pediatrics and Internal Medicine. Dr. Yakes Jimenez conducts research, program evaluation and quality improvement projects to develop and test interventions to improve maternal and child health, to better prevent and treat malnutrition and chronic disease, and to strengthen integration of community services and medical care. This includes on-going work with early childhood educators and K-12 school systems throughout New Mexico. She has published over 80 peer-reviewed articles and recently served as a member of two National Academies of Sciences, Engineering, and Medicine Committees focused on infant and young child feeding. Craig Johnston, PhD is an associate professor and department chair for the Department of Health and Human Performance at the University of Houston in Texas. He obtained his Ph.D. in Clinical Child psychology from the University of Kansas, Lawrence, Kansas. Craig’s research is translational in nature, and he enjoys working directly with the individuals who participate in his studies. Some of his major accomplishments include developing an effective school-based program for children with obesity. His primary focus in this area is to develop interventions for those who carry an unequal burden in terms of health issues, predominantly those of low income and minorities. He also has been able to assess large community based programs to determine which components and strategies support weight loss efforts. In addition to his clinical work and research, Craig is active in providing training to health care providers in beneficial ways to talk with clients. Finally, Craig is engaged in training the next generation of individuals who will combat the obesity epidemic and other significant health issues by training both undergraduate and graduate students at the University of Houston.

Charmaine Jones is a Registered Dietitian and Owner of Food Jonezi. Her area of expertise includes personalized nutrition counseling and development of corporate wellness programs. She is also an adjunct professor at the University of District of Columbia. Charmaine has partnered with organizations such as DC Medicaid Programs and presented to broad audiences sharing food and nutrition recommendations to employees at Planned Parenthood, American Dental Education Association and Howard Hughes Medical Institute. In 2019, Charmaine was invited to speak at Yale University’s Black Students Solidarity Conference to discuss the misrepresentation and stereotyping of Black foods in the field of nutrition and dietetics. This presentation was based on her article “Do I Have to Eat Like White People,” which was acknowledged and further emphasized by Huffington’s Post in the article of “White People Foods Is Creating an Unattainable Picture of Health.” Charmaine has shared her expertise in widely known wellness magazines. She also served as a Health and Wellness Committee Expert for Superfeet, Inc., in 2019. Charmaine and her colleagues created a podcast, “Misrepresentation of Cultural Foods,” to educate for diversity and inclusion of cultural foods and reduce the stereotyping and misperception of Black foods.

She developed and now co-chairs the multidisciplinary Ethical Feeding Task Force at Fox Chase Cancer Center with the sole purpose of discussing ways to improve quality of life for cancer patients requiring nutrition support who may be nearing the end of life. In addition to her role as a nutrition support clinician, Jaylin also enjoys teaching. Dr. Kirkpatrick is also involved in the Academy of Nutrition and Dietetics and served as the chair of the Evidence Analysis Library Saturated Fat Workgroup, which evaluated the current scientific evidence for the effects of saturated fat on cardiometabolic risk factors and cardiovascular outcomes. Advancing Food as Medicine Program Access Through Advocacy and Evidence-Based Practices

Angela is the Clinical Nutrition Manager at an 800-bed hospital in Southeastern North Carolina, where she has worked since 2008. She is a member of the Academy of Nutrition and Dietetics and an active member of the Clinical Nutrition Management dietetics practice group, serving as chair of the Professional Development Committee. She also serves on the strategic planning committee of the North Carolina Academy of Nutrition and Dietetics. Angela obtained her BS in Nutrition from East Carolina University in 1999 and completed her dietetic internship at Winthrop University in 2001. She earned her MS in Nutrition from East Carolina University in 2006. Angela has been a part of the Malnutrition Quality Improvement Initiative Learning Collaborative since 2017 and has focused on malnutrition throughout the continuum of care for the hospitalized patient. In 2019, she shifted her focus to the Transitions of Care process for the malnourished patient upon discharge, when she and her team were awarded a grant from The Duke Endowment. Andrea Lindsey serves as Director of Operation Supplement Safety (OPSS) and Senior Nutrition Scientist with the Consortium for Health and Military Performance (CHAMP), Uniformed Services University. She received her Master of Science degree in Nutrition from University of Maryland, College Park. Closing The Expectation Gap: Health Care and Food Bank Partnerships to Address Social Determinants of Health

Dr. McDermid is a Registered Dietitian Nutritionist who earned her PhD from the London School of Hygiene & Tropical Medicine in the United Kingdom. Her research interests have focused on the relationship between nutrition and infectious diseases, including the contributions of breast milk and breastfeeding practices in a global context. Dr. McDermid is a co-investigator of a large Tanzanian clinical trial investigating breast milk factors associated with healthy growth and development, a co-investigator in an international consortium investigating breast milk composition and infant growth, and an expert consultant to the Academy’s NIH-funded scoping review of breast milk composition. She has numerous peer-reviewed research publications and presentations on breast milk and breastfeeding, and she has taught undergraduate and graduate students, dietetic interns and medical fellows on these topics during her service as a professor. Dr. McDermid has also developed and delivered knowledge and skills-based workshops on exclusive breastfeeding practices in rural sub-Saharan Africa to midwifes, nurses, and community health workers. Dr. McDermid is the 2023-24 Chair of the Academy of Nutrition and Dietetics Council on Research.

Michos is an Associate Professor of Medicine within the Division of Cardiology at Johns Hopkins School of Medicine, with joint appointment in the Department of Epidemiology at the Johns Hopkins Bloomberg School of Public Health. She is the Director of Women's Cardiovascular Health and the Associate Director of Preventive Cardiology with the Johns Hopkins Ciccarone Center for the Prevention of Cardiovascular Disease. Dr. Michos has authored over 600 manuscripts in peer reviewed journals and 10 book chapters. She is an internationally known leader in preventive cardiology, Women's Cardiovascular Health, and Cardio-Obstetrics. Her research focuses on (1) CardioObstetrics and cardiovascular disease in women (2) physical activity and nutrition; (3) risk prediction for cardiovascular disease including the use of coronary artery calcium scores, markers of inflammation, and other biomarkers, (4) lipids and statin therapy, and (5) vitamin D and other supplements. Her clinical duties entail seeing patients in the Women's Cardiovascular Health outpatient clinic and the Echocardiography lab. She also teaches students at the Johns Hopkins University Medical School and the Bloomberg School of Public Health. Dr. Michos is the recipient of independent investigator funding through the National Institutes of Health (NIH) and the American Heart Association (AHA).

Jeroen Molinger is the senior lead Clinical Medical Exercise Physiologist of the Human Physiology and Pharmacology lab at Duke. University Hospital with 28 years of experience in clinical physiology. Originally from the Netherlands, Jeroen has a Master in Clinical Exercise Physiology and Physical Therapy and is a current Ph.D. candidate study muscle physiology/muscle mitochondrial function. He currently specializes in metabolic cart assessments, muscle imaging, and exercise physiology in perioperative care. Jeroen leads training efforts for the use of metabolic carts and muscle imaging devices at Duke.

Melissa earned a BS from Michigan State University and a MS from Eastern Illinois University. After completion, Melissa worked as a Clinical Nutrition Manager at OrthoIndy, providing nutrition care for inpatients, working on quality initiatives, and supporting area hospitals through audits and training. Melissa relocated to Washington in 2017, working in outpatient nutrition counseling working for ATI Physical Therapy. There she helped clients with a range of nutrition-related needs including food allergies, weight management, blood sugar control, and heart-health measure improvements. Melissa currently works for UW Valley Medical Center in the role of Manager of Clinical Nutrition & Patient Services serving the southside of the Greater Seattle area. In this role she has collaborated with other disciplines to improve tighter glucose control for patients and presented to WSHA on outcomes, increased dietitian FTEs to better match increased complexity of patients, and improved patient tray delivery services by decreasing the number of late trays and increasing patient satisfaction. She has been awarded the Excellence in Management Practice by the Washington State Academy of Nutrition & Dietetics. Dr. Nattiv's primary areas of research and publications have been in the area of the female and male athlete triad, stress fracture risk factors and prevention, and osteoporosis management. In addition to serving as a team physician for the UCLA Department of Intercollegiate Athletics since 1994, Dr. Nattiv has served as a team physician and consultant for USA Track and Field, USA Gymnastics and the United States Olympic Committee. Lukas Neafsey, RN, BSN (they/them/he/him), is located in Denver, from Denver. They are currently working at The University of Colorado Hospital (Anschutz), on the inpatient oncology floor. He identifies as nonbinary and transmasculine, and began his medical transition journey in January of 2022. Lukas is also an OUT Athlete, or a member of the OUT Foundation, which empowers LGBTQ+ young adults by providing access to inclusive fitness spaces, wellness resources, and more. Though Lukas started their journey with fitness and nutrition long before they began their medical transition, diet and exercise have always played a key role in their process before coming out, coming out, and as they started to transition. He is passionate about advocacy within the medical field for queer and transgender individuals, as well as sharing his story in hopes that healthcare spaces may become safer for the LGBTQ+ community.

Gender-affirming Nutrition in Sports: Providing Excellent Care for Transgender and Gender Diverse Individuals

Diane Nowak is a Certified Nutrition Support Clinician and Advanced Practice RD at the Cleveland Clinic. She specializes in nutrition support for adult critically ill post-operative patients and those requiring mechanical support. Diane has spent 28 years working with adults and geriatric patients in the ICU starting at Marymount Hospital. Diane joined the Cleveland Clinic in 2004, where she has focused on critical care nutrition since 2008. Diane is a super user of indirect calorimetry (IC) and has published data on adult mechanically ventilated cardiothoracic (CTS) patients comparing IC and the Penn State equations. She was also involved with an abstract published in Critical Care Medicine 2015 supplement, comparing weight-based equations with indirect calorimetry in ventilated CTS patients. She's involved in teaching Dietetic Interns, Residents and Fellows. Most recently, Diane was involved with data for publication, the Use of Bedside Ultrasound to Assess Muscle Changes in the Critically Ill Surgical Patient in JPEN 2020. Diane co-authored the chapter Vitamin Deficiencies in Adult Malnutrition: Diagnosis and Treatment and associate editor of the Cleveland Clinic Nutrition Support Handbook 4th edition. Diane continues to work with IC and is developing a protocol to train dietitians to perform IC at the Cleveland Clinic.

Advancing Food as Medicine Program Access Through Advocacy and Evidence-Based Practices

Rene Pearson is from a small town outside of Springfield, IL. She began her role as a disability advocate and public speaker at age 14 years as a State Goodwill Ambassador for Illinois. Since then, she has continued advocating for disability-related accessibility in higher education. She was a panelist speaker for disability pop-up engagements, a guest speaker for “Disability in Higher Education and Society” semester courses at Saint Louis University, and assisted in the implementation of a campus disability support and student advocacy group. She increased access and awareness of disability-related dorm and travel needs for her university. Her latest speaking engagement was teaching a class of dietetic interns about working with patients with disabilities. She completed her dietetic internship at the St. Louis Veteran Affairs Health Care System in June 2023 and is a RD and clinical dietitian at HSHS St. John’s Hospital in Springfield, IL. David Proctor is an elite athlete who attended Boston University from 2004-2009 where he was a member of the Track & Field and Cross-Country teams. During his time with the Terriers, David set three individual, school, and New England records, and was a member of three record-breaking relay teams. He was nationally ranked in the NCAA rankings each year with a peak ranking of #2 in 2007. During that season, David became the first collegiate athlete in New England to run a sub-4-minute mile, a time that placed him #11 in the overall World Rankings. He also set multiple conference records and was named Conference MVP and the NCAA Eastern Athlete of the Year. David still represents England and Great Britain at the European and World level having competed in five consecutive Olympic Trials. Paula Quatromoni is a Registered Dietitian and tenured Associate Professor of Nutrition and Epidemiology at Boston University where she is the Chair of the Department of Health Sciences. Her research focuses on eating disorders treatment and prevention, eating disorders in sport, school- and community-based child and adolescent health promotion, and dietary patterns and cardiometabolic disease. She’s been an investigator on the world-renowned Framingham Heart Study for more than 20 years. In 2004, she pioneered the sports nutrition consult service for student athletes at Boston University. She’s published widely, including several clinical case studies and research papers on male and female athletes’ eating disorder onset and recovery experiences. In 2015, she joined Walden Behavioral Care as a Senior Consultant where she led the creation of the GOALS Program, an Intensive Outpatient Program designed to treat competitive athletes with eating disorders and contribute to research informing evidence-based practice. Dr. Quatromoni earned her B.S. and M.S. degrees in Nutrition from the University of Maine and her Doctorate in Epidemiology from the Boston University School of Public Health. She’s won several awards for excellence in teaching at Boston University where she maintains an active program of research.
